On the sixth floor, the Willaston Bar frames Cape Town through 5.5-metre pillowed glass windows. The name comes from the vessel that carried the first grain shipment out of the original silo complex in 1924, a detail that ties the room to the building's working past. Executive Chef Veronica Canha-Hibbert runs a kitchen built on seasonal, local ingredients, kept simple rather than fussy. The wine list runs local and international and changes as bottles come and go. Guests settle in for a slow lunch or stay through the evening; a cocktail here comes with a long view of the harbour and the mountain behind it.
